- 2 cups fine diced yellow onion ~ 1 large yellow onion
- 1 pound baby bella (cremini) mushrooms (4 cups when fine diced)
- 1 tablespoon minced fresh rosemary
- 1 tablespoon fresh thyme leaves
- ¾ cup all purpose flour
- ½ ounce mixed dried mushrooms
- enough red wine to cover the dried mushrooms or water

- 4 teaspoons red miso paste or more, as desired
